Karen Wright star of Great British Bake Off has given us another recipe to try, this time its Coronation Chicken and keep reading to see how you make it.
A super way to use up leftover chicken. It makes a great sandwich or pitta bread filling or a topping for jacket potatoes
Left over cold chicken or turkey
1 Tbs mango chutney
Salt and pepper
2 Tbs Greek yogurt
1 tbs mayo
1 tbs olive oil
1 chopped red onion
Chili flakes or fresh chili
1 Tbs curry powder mixed with a bit of water to make a paste
Half a can of coconut milk
Chop the chicken and mix with salt and pepper, mango chutney lemon juice and zest, yogurt and mayo
Cook the chopped onion in a frying pan in the oil, add the chilli and curry powder paste, sizzle for a minute and then pour in the coconut milk, simmer until reduced in volume. Take off the heat and allow to cool, then fold it into the chicken mixture. Scatter on the flaked almonds.
