Many of us crave the delish desserts from Great British Bake Off or the dishes off MasterChef but we simply haven’t got the time or money to devour such grub.
Well not anymore as we introduce our very own star baker, a Yorkshire lass, talented chef and cook, and downright fabulous woman – our columnist Great British Bake Off’s Karen Wright who will be sharing with us Karen’s Cheap Eats and Treats each week!
Here’s her first cheap, simple, and easy-to-make recipe:
Cheats Red onion, tomato and goats cheese-tart
This is one of my favorite emergency dinners. I call it cheats as it uses shop bought pastry! If you keep a roll of puff pastry in the freezer and you have a bit of cheese and an onion you have a dinner in no time. Don’t overload the pastry with toppings as that can create a “soggy bottom”. Anything can be used, think about your fave pizza topping and go from there!
1 roll of puff pastry defrosted
1 red onion finely sliced into rings
1 tbs oil
1 tsp chilli flakes (optional)
1 log of goat’s cheese (or any cheese to suit your taste)
Handful of cherry tomatoes halved
Handful of grated cheddar cheese
1 beaten egg (or a bit of milk)
Pre heat the oven to temperature on the packet of pastry.
Gently cook your red onion rings in the oil until they are soft and a bit sticky.
Lay the pastry and the paper it was rolled in on a baking sheet. Carefully score a margin about 1 inch around all four sides, think picture frame! Be careful not to cut right through to the bottom. This will allow the margin to puff up and frame the tart!
Lay the cooked onion on the pastry then scatter the remaining toppings on top of the pastry taking care to keep your margins clear of toppings. Using a pastry brush or clean fingers run some egg or milk on the margin so it will take on a golden color. Cook for about twenty minutes until the pastry around the edge is puffed and golden.
Good served with a big mixed salad or for a bigger appetite a jacket potato.
